TRIGONA SOUR HONEY
Trigona bees belong to Meliponini species of bees from family Apoidea. They have no sting. If disturbed, they will bite to defend themselves. There are more than 500 species of Trigona bee worldwide. They can be found in tropical and subtropical regions such as Southeast Asia, Australia, Tropical America, the Solomon Islands, New Guinea, India, Sri Lanka and even in Africa
Trigona bees collect nectar from flowering plants or through the leaves, and they are fermented (fermentation) in the hive covered by propolis, and finally, trigona sour honey is produced
At first, trigona bees will collect nectar/pollen containing more than 80% water content and store in their second stomach. Through various activities of enzymes in the stomach (± 15 days) nutrients such as vitamins, minerals, and amino acids will be generated. At the same time, the activities of enzymes will convert polysaccharides to monosaccharides such as glucose and fructose, which can be absorbed by the human body
After that, the water content is reduced to 30%, and it will be absorbed into the hive hole and fermentation will be carried out. Through these processes, the honey produced by trigona bees will have a sweet and sour taste with a fruity aroma

DIFFERENT TYPES OF PROPOLIS
There are various types of propolis in different colors: black, green, white, yellow and red according to botanical resources taken by trigona bees
There are two types of color for propolis selling in the market which are black and green. Both items have a different taste. The Green propolis tasted with spicy flavor while black propolis tasted slightly bitter
Green propolis is produced by different species of trigona bee that produce black propolis. This species is more difficult to be maintained and only take selected botanical source which makes the propolis produced are of better quality
